I think your priority should be trying to outsmart the weather. From what I understand this is now harder to do than it has been historically, but start with the climate charts and work from there. Get this wrong and it could be a pretty miserable experience.
Or tell us which month you intend to travel in and we can pitch in accordingly.
Would have been close on 15 years back now but took my eldest two (1 & 3 at the time) to Koh Samui. We just stayed in a small independent place with a pool and right on the beach. As noted up thread, the staff absolutely doted on them both.
