+1 to only using the voucher on something you actually want to do!
Personally, when I had an economy only voucher (before upgrading the credit card) I decided the best value I could get from it was using it on a short haul route I actually wanted to fly. So two people (plus bags) to Ljubljana and back for 14,500 Avios and £2 seemed like a decent deal and I’ve no regrets on that.
In my opinion Avios are best used on short haul economy or long haul business. But ultimately if they’re taking you somewhere you want to go at a price that’s a reasonable amount below the cash fare then it’s worth it.
