The only airlines in which I’ve encountered 2-prong adapters in recent years are Air China (particularly on domestic flights on which NC headphones are a must) and China Southern Airlines.
Virgin UC A350 used 2 pronged headphones but you could use a standard 3.5mm plug in one of the holes and get full stereo. The holes are hidden under

I carry a pair of Bose NC700s and a pair of AirPods Pro with me. I find the AirPods work fine (i.e. ANC works properly) in most cases, especially on modern aircraft where the pressurisation is different so there’s less background noise. If you’re on an A330/B787, you might find the NC700s would be a better option.
Bose run a try-before-you-buy scheme (or, at least, did), so you can buy from bose.com and return if you need to. Worth checking if your employer has access to accommodations.bose.com, for even greater discount (I get a signifcant percentage more off at bose.com than I’d earn in VS/BA points).

I use AirPods Max for flights including virgin. I got them second hand from CEX. the only pain / rip off is the cable you need to use with a standard 3.5mm socket.
But, you say, why don’t you use a Bluetooth adapter?
I’m astoundingly forgetful, so I’d probably leave it attached to the plane!
Anyways, the Max are great for flights.
