any advice or guidance please?
travelling MAN-LHR, then from LGW the following day. I’m not pushed for time so what is the simplest and least stressful way of getting to LGW from LHR T5 ? I’ve been looking on https://www.heathrow.com/transport-and-directions/travel-between-airports and it seems National Express should do it.
but factoring in I need to get to the Hilton Gatwick https://www.hilton.com/en/hotels/gathitw-hilton-london-gatwick-airport/ it might not be the best option.
No idea whether I’m travelling from Gatwick North or South either, and the BA website claims I have no bookings again.
National Express is by far the easiest public transport way between the two airports.
BA uses South Terminal at LGW but the NEX stops at both terminals.
The hotel website says it’s linked to South by a covered walkway so I’m not sure why you don’t think it’d the best option.

Does the NEX coach make intermediate stops? I would find it highly stressful to be watching my luggage isn’t stolen/damaged at every stop

For the OP, the only intermediate stop will be at Gatwick North.
The Airline (Oxford Bus Company) runs approximately hourly between Heathrow & Gatwick
There’s a few coach options not just NEX. I think megabus run many each day. As above The Oxford Airline, I think there’s also an airport transfer company that runs a bus a few times a day but probably expensive

They are indeed. Even though Megabus is a Stagecoach Company and The Airline is Go-Ahead.
One thing to be mindful of is that the Megabus tickets are coach specific, and generally sell at £18 for a single ticket. The walk-up fare is £15 single or £20 for a period return.

I don’t think every megabus service is an Oxford airline
No there are a few actual megabus now
But I don’t see any reason why you’d use them over NX on this run, NX run many more services and you can get a ticket that has flexibility to go on an earlier/later coach
You can also take the Elizabeth line to Farringdon and from there a Thameslink to Gatwick (if there are no strikes it may be a good way to avoid the traffic).

The OP said they prefer easier routes as they’re not right for time. Plus it’s not that much quicker depending on how long you have to wait for the next respective departure
