Is there a way to find out the flight number of an inbound flight? As in… if I have a KLM flight out of AMS and it’s delayed due to the plane being late to land at AMS, can I find out what the flight number is of the preceding flight so that I can track it and get a clearer view on how delayed my flight will actually be?

Yes, the Flightradar24 app helps with this.
Go to AMS, then departures, then find your flight from AMS, then click on the aircraft registration.
BUT be careful, they could do last minuteish aircraft swaps to avoid delays.
The flightaware app does similar but if you get to the page with your flight, there’s a “where is my plane” button.
A few of the airline apps do it as well.
