How does the Hilton Gold “free” breakfast actually work? Do I just book a room rate without breakfast and it’s automatically given when checking in?
Yes, normally when I go to breakfast they just ask the room and I’m on the list. Sometimes, I have to say my status and they quickly check with the front desk
Use the app to check / setup your ‘My Way’ benefits if you want it to default to your preferred benefit each time. (Example: You can pick between bonus points and breakfast)

It’s usually when I’ve booked late or arrived late that this happens. like you say very infrequent

It doesn’t say where you are travelling but if in the US, you no longer get breakfast but you get $15 per person daily credit. Make sure you check that if you have two people in the room, that’s noted on your account. I’ve found most hotel breakfasts in the US are around $25 per person so you either have to make up the difference or go to the coffee shop for coffee and pastries. Charge to your room and check bill at checkout. Credit in not cumulative so use it or lose it every day.

The US element mentioned above, I find utterly astounding. For the marginal cost of offering breakfast versus making a loyal member feel valued, they still chose to penny pinch.
We stayed twice this month at the Hilton (ex-Crowne Plaza) across the Boulevard de Leeds from Lille Europe station.
Our key card folder was gold, which was not something I had seen before, and it specifically mentioned the option of free breakfast.
However, on neither occasion was anyone checking who went in for breakfast – I suspect that I could have walked in off the street and eaten it. Staff shortage presumably – I only ever saw one person clearing tables, restocking the food etc.
A warning, though, if you do not like black coffee at breakfast. Instead of the usual type of bean-to-cup machines with a large menu, they had a very fancy Nespresso machine with a wide range of roasts, but only a very limited range of types of black coffee.
Milk had to raided from the cereal table, and no way of getting hot milk.
Obviously not something that negates the convenience of the location, but definitely an annoyance.
