How long are you there for, and what are your plans? Points-wise the IC is in a very central location (and when I lived there a few years ago had a great cocktail bar!). The Pullman is also nice as @MisterE says. I’d suggest going independent for an apartment, there are plenty in and near the CBD.
The beach at Glenelg is nice with plenty of kid-friendly eateries and very accessible on the tram from the city centre. Also, if you haven’t been, Cleland Wildlife Park (30 min drive from the city) is well worth the visit.
