There’s no guarantee of more availability opening up, but you can keep checking (and ask if someone with a voucher will check if there’s any “extra”). You’d need to call to book this and ask the agent to apply the voucher to the inbound leg. It might be safer to book a contingency return, such as from HKG, and get a separate flight between the two.
You can use the other half of the voucher on another trip within 12 months, but it would need to comply with the open jaw rules (lots about that on this site).
