600k points in Amex – best way to spend in Business Class?

We have just over 600k points in Amex and would like to travel to Melbourne and back from Adelaide February time. We are flexible on dates but I’m struggling to find the best way to spend them. I’ve looked at upgrades but I can’t see any airlines guaranteeing an upgrade at time of booking unless I’m missing something. Otherwise it’s using them and paying taxes. Any help would be greatly appreciated.
