Amex 2 year wait question

I’m planning to cancel my Preferred Rewards Gold before the £195 fee hits, switch to Chase 1% cashback for 2 years, and then get Platinum on a 100k+ points joining offer after the “cooldown” has expried in 2 years. I’ll transfer my Amex points to Avios.

Does this work? Are there downsides?
