Apologise — initially post on a different forum. Hopefully get some answers this time.
We will be departing HKG next month and unfortunately (my fault) for not timing it better, I will miss the cut-off date for my BA Silver (OW Sapphire) hence not able to use any CX lounge.
But we will have Amex Plat, currently we see that there are a total of 6 lounges we can use — would you be so kind to advise the top 2 we should bother with? Our dept. time is 1540hr if that matters.

We visited the Amex lounge and Chase Sapphire Lounge in April. The Chase Sapphire lounge is larger and feel more spacious compare to AMEX lounge. It also have a hot food menu in addition to the buffet spread. Amex lounge have free shower facility which is quite nice. They are right next to each other so you can easily try both.
