Amex voucher – cancel and rebook

I would appreciate some advice please. I currently have a Amex voucher booking in CE for 2 people from LGW-SVQ in June. I’d like to cancel the booking and immediately rebook the same flights using my wife’s Amex voucher. If I do so then can I be sure of Avios availability for the cancelled flights, enabling me to rebook them ? I wouldn’t want to cancel the flights only to find there is no Avios availability.
