I wanted to use my 2 for 1 voucher for business class flights to cape town in November but i can’t see any availability with the voucher or even without? have i been to slow or are they likely to release more seats over the coming months?
You’ve probably been too slow, you need to be online or on the phone at T-355 for very popular routes like CPT (see the myriad articles and threads on this site about this!)
You could get a cancellation, or your 241 might open up extra availability in the coming months, but there are no guarantees and on this route it’s unlikely BA would make more standard award seats available.
People on here have done a workaround by booking on BA to JNB (which has better availability) then getting a connecting internal flight to CPT.

Per SeatSpy just now, November to JNB isn’t looking good either for CW, let us know if the voucher opens up more availability.
You can also try starting in the regions, e.g. NCL/EDI/MAN as this sometimes opens up more seats than starting at LHR (there’s also an article on this, if you weren’t aware).
