Specifically for the BAPP 70K £3K SUB requirement, can I buy a bunch of Amazon gift cards to get me to the bonus? Do they count?

It works I can assure you. I’ve purchased Amazon credit in the past, during Lockdown 1, to reach the Amex welcome bonus on the PRG card.
I think I recall maybe three years ago, at least with the PRG credit card terms & conditions, one could not meet the welcome bonus spending target by purchasing gift cards, which if my recollection is correct, might explain why this information still surfaces in places like reddit.
I was surprised to read on HfP that gift cards do count towards the SUB so maybe it changed in recent years.
Amex doesn’t know what you’ve bought, you only see the retailer on the transaction. As for counting towards the SUB, any spending on the card either counts or it doesn’t, so anything that earns you avios will count towards the SUB, the 241, retention offers and so on.

Except you’re not buying a gift card, you’re buying credit from Amazon.

I’m willing to stand corrected if you can find a copy of said T&C, but I think you’re wrong. How would Amex even know what you’d spent on, unless you were buying from wesellonlygiftcards.com
