Hi.
I was due to fly back from Gibraltar to Edinburgh this Saturday (the outbound flight is flying as normal tomorrow).
I called them and have got them to route me via Gatwick, which is fair enough but it turns a 3.5 hour journey into an 8 hour one with a long layover.
Am I entitled to claim back any meals or other costs for my extended stay in Gatwick?

Yes, you are. Easyjet has it very well spelled out on the website with a form to make it easy.
The rights (section “3.Right to care” specifically to your question about meals):

Additionally, you should be entitled to a delay compensation, read the section 1 to see what applies to your specific situation.
