Not a clue where I should shoe-horn this question as it encompasses in-flight experience, airport transfer, lounge quality and more!
I have the option of LHR – AMS – FCO with KLM or LHR – CDG – FCO with Air France. Have SkyTeam status so will get lounges everywhere (and Priority Pass & BA Silver too FWIW). Flight times are all the same to me so I’m easy.
Which should I choose?
AMS is a better transfer experience than pretty much any massive airport, can’t speak for lounges.

Pardon me for the dumb question, but what’s the reason for not flying direct to Rome (unless of course you MUST fly AF or KLM)?
As a heavy traveller with Schengen connections through both, I would say it depends on what times the flights are.
If a 6am departure, I’d choose via CDG. Passport control tends to be quicker, even adding on security. AMS has been running at 40-60 minutes regularly recently. Though did improve last time to 30 minutes. Later departures from London should see shorter wait times of around 5-10 minutes before the afternoon bank of long haul arrivals. Walking distance at AMS is far shorter than at CDG however, though if you know where you are going it is straightforward.
Lounges, 2F on the outbound at CDG trumps AMS Schengen. Inbound, 2E porte L just beats AMS non-Schengen if you have access to the Air France lounges. For the inbound AMS non-Schengen is slightly better than 2E porte K, though I have not been in there since the refurbishment was completed due to mostly having 2E porte L departures.
I’d personally prefer CDG, over AMS simply for ease of movement through the security and passport (I should mention that e-gates can be used if on at CDG on outbound, but not inbound, and vice versa at AMS, though at AMS they are not always open).
