So my friend’s are not that tech savvy when it comes to collecting points and converting them/spending their points on their Amex cards. They are happy for me to use their points. If I add my Hilton Honors account number to their American Express accounts – the preferred rewards gold card that is, am I able to transfer their points onto my account, in exchange I have said I will book a hotel for them.

I’ve always had issues with this from on the Amex side when I tried with Mrs HJ’s card.
Hilton allows points transfers for free so the way we do it is for Mrs H to create a Honors account, transfer her MR points there as normal, then transfer the points from her Honors account to mine.
Might take a few days the first time you do it.
The names have to match for Amex transfers. The easiest thing would be for you to help them set up a HH account and show them how to do the transfer. That will also avoid any issues when they check in to a hotel on a points booking under your name. They could also transfer any points to you that they wanted you to have.
