Sorry, I’m sure this has been mentioned before but can’t remember the answer, and can’t find in search forums either.
Can I book, or perhaps should I be able to book but maybe the computer says no but a real person might say yes, a return flight LHR-DUB out in economy, back in club?
Yes, you should be shown all options. I think there was an IT glitch mentioned recently in respect of this though, which might mean you need to call for some routes.

As @Anna says, you should be able to book return flights in mixed cabins, but for some reason (IT glitch!) Dublin flights seem to be an issue. I’ve been looking at Dublin flights all week and you only see pricing for return flight in outbound cabin. Have booked a couple of other flights this week to different destinations in Europe and Scotland and all cabin options were available for both outbound and inbound.
Calling seems to be only option for Dublin.
