I am looking to book 3, 5 day over lapping BA holiday over a 7 day period.

Presumably the intent is holiday 1 outbound day 1, holiday 2 inbound day 8? If you don’t take the inbound flight in holiday 1, BA have the right to charge you the difference between a one-way and a return. And if you don’t take the outbound of holiday 2, you won’t be taking the inbound flight either as it will be cancelled.
Oh and you miss the double tier point offer, assuming that’s still running with the new changes.
Well, the OP hasn’t come back yet, but I think as long as all sectors are flown and all hotels checked in and cars collected, it should be fine.
OP needs to remember that for double tier points each holiday must start in the UK? can’t remember if has to end there as well.
