I have the BA Premium Plus Amex , I’m looking to sign up for the Amex Gold or Platinum cards, would I be eligible for the sign up bonuses.

Yes, she should be able to refer you. Normally BA premium is 9000 avios for the referrer. As far as plat card goes you would get 80000 MR points instead of 75000 initially and then a further 25000 if you kept the card for 15 months and made 1 purchase. You would need to spend £10k to trigger the signup bonus within 6 months. The card has an annual fee of £675 and comes with one free supplementary card as well.
For the gold card, I think you would get 30000 MR points and a further 5000 after 15 months, in addition to spend bonuses. You would need to spend £3000 within 3 months to trigger 30k. The card has £195 annual fee which is waived for first year.
