I tend to use Revolut, simply because I saw it in the app and I used it once and it was fine, and I’m lazy! I’m sure there are cheaper options.
I haven’t used it in Thailand, but I have used Airalo extensively in several counties across Africa and Asia without any issues and have generally found their plans to be very price competitive.

AIS has probably the best network in Thailand.
Check in the Trip.com app, there are often some deals – 50 Gb / 10 days – £5.05 at the moment
If you get a True tourist sim at the airport you can then convert this to an eSIM using your phone. If you do go for a tourist simm at the airport, you can either get a 30day unlimited package for £28 or get a shorter and cheaper package (15 days £16, 8 days £10) and then add data cheaply as needed (e.g. £2 for 10GB for 8 days)using the app.

I’ve been tossing up signing up to honest sim (£5/month for global roaming + better data coverage in the uk)
I used Jetpac in Thailand last month and was very happy with coverage/speeds. An existing customer referral can get you $5 off. Note that they price in different currencies (and round the pricing a bit), so you can usually save a bit compared to the GBP pricing by playing around with the settings.
AirAlo offer 10 days of Dtac ESim for USD$9.90. The airport price in Thai Bahts is the same price if you want to buy it when you arrive. Some counters though only have physical SIMs. You can then then extend this for additional data through the DTAC App. 50GB data, 100m calls. There is also 15 day, USD$19.95, unlimited data, calls too. If you get referred you get $3 off. I haven’t posted a referral code for Airalo as I assume it would be against the terms of HfP.
We have used Trip.com for some very cheap Far East regional SIM’s. We did have an issue with small transactions being charged to our Amex for several months until Amex cancelled and re-issued the card. I don’t know if this was linked to Trip.com’s SIM but I suspect it was as we rarely used the Amex unless we could charge costs in GBP.
We just got tourist eSIMs when we got there, the staff on the counter were really helpful and set it all up for us. Found the sim worked well and provided more than enough data for us (although our usage was probably quite basic just a little browsing, booking taxis or restaurants and maps)
