I will be booking a trip for OH and myself for July ‘26. By that time I will only have one “Upgrade” voucher to use. Can I assume that I can use it for 2 outbound WT+ -> CW flights at -355 and then add two ordinary Avios CW redemption flights when they are available for the return and BA can then convert this into a return booking?

You can book this, no problem. BA won’t turn 2 separate bookings into one, but if you particularly need it to be all on one PNR, you can call and ask them to add the inbound leg when it’s released.
