If we narrow it down to suggestions with a pool only with something else for families then I can think of….

Doubletree Cadbury (“Bristol South – don’t be fooled it’s not that near Bristol!”) has a nice pool and the likes of Weston, Puxton Park, Cheddar, Noah’s Ark and Wookey Hole as well as Bristol’s docks and history will keep them entertained no problem.
Hilton Cardiff is right in the centre so some good stuff to do round there like the castle, bay, museums etc.
Hilton Puckrup Hall – if they don’t play golf then book some beginner’s lessons.
Hilton Birmingham Metropole. Deeply unexciting hotel but pool charging scandal is over AND you can time it with something family friendly or of interest at the NEC.
Doubletree Harrogate is pretty impressive for a Doubletree; did a pretty good job of renovating the clapped out Majestic, although like all old buildings, rooms can be a bit pot luck. a short walk to Betty’s for overpriced cake; and Ripley Castle, Stump Cross Cacverns, Royal Armouries, Brimham Rocks Forbidden Corner, National Childrens Museum, National Science and Media Museum (when it reopens) and a million other things, all brilliant (‘cos it’s Yorkshire) might be of interest.
Doubltree Stoke – only 30 mins to Alton Towers obvs!
And the final curveball: The Caledonian may no longer be a Waldorf/Astoria and no idea how refurb works are affecting things but you can’t argue it Is A Hilton (OK Curio), does have a pool (albeit it’s nowhere near as good as the Sheraton nearby) and is in an amazing city with loads for your family to see and do.
