One agent once told me you can book a further distance on the route back. I specifically thought you couldn’t, as that’s what the FAQs generally say. Unsure as I didn’t put it into practice

I think you misunderstood. The agent is correct. For an open jaw the geographic distance between your original landing airport and your new departure airport (ie the non flight sector) must be SHORTER than both of the two flights.
So your flights shouldn’t have been possible to be booked as an open jaw as the distance between BLQ and ATH isn’t shorter than LHR to BLQ.
