I have a flight from Brussels to NY via LHR coming up, booked econ light cash as figured hand luggage would be enough for a few days.
Turns out now I need to take a bag but i’ll be in/around europe/brussels before and I don’t want to lug a suitcase so I was planning to leave at Heathrow storage.
It’s one ticket Brussels -> LHR -> JFK, is it possible to check the bag in after the first leg, at LHR? 5ish hour stopover so time isn’t an issue.
Yes that is no problem – if you haven’t booked a fare with a luggage allowance you’ll need to pay for it either in advance or at the desk (not sure costs sorry!)

It’s definitely possible, as SamG said. The only problem would be if your first flight is delayed, you might not have time to clear immigration, retrieve your bag and check it in. You will probably be fine, but might be worth thinking about what you’d do in that case.

Or £0 at self-check in on the “The flight is very busy days, we invite you to check you cabin bag for free”. There doesn’t seem to be any form of size-check.
(Indeed, does self check-in invite you to check you cabin bag every time now?)
