If the last BA flight of the day is cancelled would they put me on the next IB LHR-MAD flight (if seats)? (at least three) or would they try to put me on the next day flight?
You would need to see what, if any, re-routing BA put in place in the first instance, but there’s no reason why they would refuse to move you to the IB flight, especially as it’s a OW partner. How far out are you anticipating this might happen, as that also has some bearing.

Depending on how much notice has been given and there being availability then yes they will.
Thing is if the last flight of the day is cancelled, you and your party aren’t the only problem BA have. There’s going to be a whole plane load of people in contention for the available seats on the IB flight. BA will have criteria for sorting that, but you being on an unprotected connection won’t cut you any special consideration.
