Looking to book a hotel later in the year and only giving me the option to pay in Euros, given the size of spend I was hoping to put in on the Amex. I’m assuming there’s no way around this? I had a look and I can book through Amex travel (not FHR or THC property) or Expedia but assume my Hilton diamond benefits won’t be applied.
Do you mean you want to book now but pay at the hotel? You can book the Advance rate in GBP, but payment at the hotel will be in the local currency, or at the hotel’s exchange rate, which may not be very good.
You can pay in euro on your Amex and it’ll be subject to a 2.99% fee. If you pay locally at the hotel you may be given the option to pay in GBP on the terminal which will likely be a worse rate/higher charge but you will still have the option to pay in Euro on the terminaml.
Your call whether it’s worth losing your benfits (and possibly getting a lower price on Expedia) or paying 2.99%

Pay in advance, but still asking for it in the hotel currency (Euros).
Amex doesn’t support paying in anything other than the hotel’s currency. If you want to use Amex at a non-UK Hilton you must pay the forex fee (unless a UK travel agent is involved).
It’s not correct that you can book in GBP in advance. Paying in advance is charged in the same way as paying at the hotel (except for North America) which is why the Amex offers work.
Visa and MasterCard support paying in the currency of the card but the rate used by the point of sale is typically 4 to 6% worse than the normal visa or mc exchange rate.
I’ve always paid in GBP in advance, but now I’m thinking they might actually all have been U.K. stays 🤷♀️. Or used VS/Curve.
And to square off the OP’s other query, Hilton Honors benefits won’t apply to Expedia bookings. They should apply to Anex FHR bookings and any special rates (Virtuoso, Internova Select, Impresario, etc.) bookable only by specialty agents. I say should because that’s not always the case with FHR prepayments.
