Hi there
I have tried to look at the policy document but cant find the exact wording
We have travel thats not booked on Amex Platinum, do we still have the benefit of their insurance for travel?
Do supplementary card holders and their family have the same benefit?
Or do I apply for insurance separately and purchase if the purchase isnt done on the card
As long as you paid on any personal Amex, you are good for cancellation etc
Medical is covered regardless of payment method.
Always worth repeating but AMEX medical excludes pre-existing conditions so most people with high blood pressure or high cholesterol would be travelling at risk as you can never be certain whether the insurance company would try to deny insurance due to these conditions for seemingly unrelated claims.

Do you still get the insurance if booked using non amex but hold a platinum amex? or need to book on any amex whilst holding platinum amex
As @StanTheMan said, for travel disruption etc – you must book/pay with any Amex you hold.
For medical coverage, it doesn’t matter what card you hold, but @vzzbuckz’s warnings are fair as you have no idea if the insurer will opt not to cover you if you have any medical conditions. It isn’t possible to declare these in advance.
