BA Avios booking 355 days ahead

Apologies if this has already been mentioned elsewhere, I couldn’t easily find it.

If when you ring up BA at midnight to book a flight using avios 355 days ahead, how does it work using the 241 voucher? Can you book one leg on it and then add the return leg when the dates become available? Do you have to always ring up or can this be done online too?

Also what’s the best (US) number to use when ringing up around midnight UK time?
