I was looking to book two rooms on two separate bookings for Barcelona as points bookings. I assume there is no issue in both bookings being in my account? The other couple are not 100% sure so I wanted the flexibility to cancel one room without losing the other booking.

On the basis the Bonvoy app lets you book two rooms with points then I’m pretty sure it’s fine if you do it as separate bookings.
