If I was to cancel Avios reward flight, would they get immediately put back on the system for someone else to book?
No, not always.

Unless it’s changed then if the original booking was into one of the “guaranteed” seats, and fewer redemptions than that number have been booked in total, and it’s at least 45 days before the flight, it will come back. But it’s impossible for you to know this so it’s a risk that I wouldn’t be taking personally
If you check back nearer the time and availability is added you could rebook and then cancel your existing booking. Or just plan another trip 😉
