Hate to alarm you, but the 4th January is a Saturday. So you would only need one night. If you meant Friday the 3rd then yes to two nights.
Uniqlo, just order online. They have a size check guide to help you choose anyway.
Hilton wise in Edinburgh, if you have Diamond status then the Carlton, though under serious renovation still it is the most central. Or, for something different there is The Roseate which is one of the SLH hotels and looks decently priced, but on the very West edge of the centre between Haymarket and Murrayfield.
If two nights then I would suggest the Carlton.
