I currently have an offer on my BA Amex for Hilton Asia Pacific hotels where spending £200 or more, gets £50 back.
The offer ends on 13th September, however I’m in Australia this December, if I was to book a hotel for Australia now under a non-refundable rate, I’m guessing it would be charged straight away and activate the offer, is this assumption correct?

No guarantee it will be charged immediately imo. Only way is to contact hotel and request payment link.
